For Superbowl Sunday I made these amazing pork tacos al pastor. I did it in the crock-pot instead of roasting in the oven. And I have to say that when I make them again I would do it in the oven. I did it in the crock-pot mainly because it was the Superbowl and we had people over so I had lots to do that day. Matt felt that when we first served it it was great but then reheated it kind of turned too mushy. So one suggestion if you are going to do the whole 4 pounds of pork I would only shred what you will serve, save the rest as whole unshredded. I served it with lots of different topping options; pineapple relish, guacamole, two different kinds of salsa, Mexican cheese, cilantro and lime wedges.
